My wife and I are planning for a retirement in Nice. Which of the neighborhoods in the city ... not close to the tourist area but still walkable would be a good place to look for a long-term rental? We are considering a budget for the rental of $1750 - $2000 per month for a 2 bedroom (and hopefully 2 bath).

That is a good budget for a long-term rental in Nice so you will have a lot of options. In the center, you could look around the Gambetta neighborhood, or near the Beaux-Arts museum.
