RN & Remote Worker with kiddos

Hi,
We're looking to buy an investment property overseas, with the side benefit that it would put us ahead on leaving the country, if it comes to that. Im a RN and my husband is a remote project manager. We have a 6 and 8yo. We've been to Portugal, and loved it. We're also interested in France, Spain, and Italy.
We want a destination that is easy to relocate to/buy property, obtain visas, and open to granting residency/citizenship to foreigners. Truth be told, we'd love to just move. But it's pretty complicated when kids are involved. So, we're starting with the initial step of acquiring the property, so as to lay the groundwork for a move.
About us: my husband is fluent in Spanish, I'm intermediate with French. We are both of Italian descent, grandparents immigrated. We feel most at home in Latin and Mediterranean cultures, and want good schools for our kids. In addition to our careers, we have a farm and raise sheep. We're very flexible, adaptable, and industrious. No problem taking on new work, getting dirty, or reinventing ourselves.
Where do you think would be a good investment for people like us? Thanks in advance for your thoughts and insights.
